- Start with the skillet
- After cooking your chicken milanesa, transfer the cutlets to a wire rack or serving plate. Carefully pour off most of the frying oil from the skillet, leaving about 1 teaspoon behind along with the browned bits on the bottom of the pan.
- Those browned bits add extra savory flavor to the finished sauce.
Build the sauce
- Place the skillet over medium heat and add the butter. Once it begins to melt, stir in the minced garlic and cook for 20 to 30 seconds, just until fragrant. Do not let the garlic brown.
- Add the chicken broth, fresh lemon juice, lemon zest, and drained capers. Stir well, scraping the bottom of the skillet to loosen the browned bits.
- Let the sauce simmer for 1 to 2 minutes, until it reduces slightly and begins to look glossy.
Finish and serve
- Remove the skillet from the heat. Stir in the chopped parsley and a few grinds of black pepper. Taste before adding salt, since capers are naturally salty.
- Spoon a small amount of sauce over the chicken milanesa and serve the rest on the side. This keeps the breading crisp while still giving every bite that buttery lemon-caper flavor.
